Mezcal Alipús San Baltazar

Alipús is a line of traditional Mezcales, made by different master distillers in their home villages according to local traditions. They use vats for fermentation from different kinds of wood like oak, cypress or pine, for example, or apply different kinds of stills. Additionally the terroir leaves its trace in the spirit with factors like soil, climate and other influences from the surroundings of the agaves' habitat or the distillery making their impact on the flavour. Traditional Mezcales are usually not aged and have an alcohol content of 45% to 50%.
